Everyone Loves Edamame!

It’s one of the most popular items in sushi restaurants, especially Bleu Monkey. Edamame is one of the most nutritious legumes around! In a half-cup serving, you can find 9 grams of fiber, almost the same amount found in 4 slices of whole wheat bread. Edamame is also a great source of protein, with 11 grams per serving. It is a healthy substitute for protein sources higher in fat and cholesterol. This little green soybean packs a powerful punch!  Try the recipe below for a different spin on edamame.

Ingredients:

2 teaspoons kosher salt

1 teaspoon chili powder

1/4 teaspoon red pepper flakes

1/2 teaspoon dried oregano

1 (1-pound) bag frozen edamame

Heat the salt, chili powder and pepper flakes in a small skitter over medium heat. Stir for 3 minutes, then remove from heat and toss in oregano. Thaw the edamame and drain in a colander until dry. Combine the edamame with the chili salt and serve warm.
