Tortilla Salad & Cilantro Vinaigrette

This unique salad and dressing is the perfect salad to be served at a causal dinner party for your friends. The individual flavor of both the salad and the dressing is unlike any salad you’ll ever have made before. With every bite you take you’ll crave more, making this one of the best salads you’ve ever tasted. For the salad you’ll need…
  • red leaf & romaine lettuces chopped or baby greens (whatever you prefer)
  • 2 ears grilled corn on the cob (removed from cob)
  • 1/4 cup chopped red onion
  • 1/2 of a large jicama (tropical root plant – tastes like an apple) sliced into matchsticks (use a Granny Smith apple if you cannot find jicama)
  • 10-15 grape tomatoes sliced in half
  • 1 roasted pepper chopped
  • 1 haas avocado cubed
  • 1/2 cup dry roasted peanuts chopped
  • Oven baked corn tortilla strips (crushed corn chips can be used instead)
Toss all the ingredients together into a large bowl and optionally add some grilled shrimp on top.
For the cilantro vinaigrette dressing you’ll need,

  • ¾ cup fresh squeezed orange juice
  • ¼ cup canola oil
  • 3 tablespoons red wine vinegar
  • 1-2 tablespoons Agave
  • 3 tablespoons smooth peanut butter
  • ¼ cup chopped onion
  • ½ – ¾ cup fresh cilantro
  • 8-10 basil leaves
  • salt & pepper
The dressing recipe makes 2 cups (or one medium sized container). Drizzle some on top of your salad, toss it all together, and enjoy your meal!
