This Asian-inspired salad is the perfect light lunch or dinner appetizer. The light, creamy miso dressing with chopped cucumber and shrimp creates a unique combination of delicious flavors and is extremely simple to make! For the miso dressing you’ll need…
- 1 Cup of white miso paste
- 1 cup of water
- 1 cup of canola oil
- 1/4 cup of chopped onion
- 1 tablespoon of agave
- 2 tablespoons of rice vinegar
Add all the ingredients into a blender or food processor and blend until creamy.
Next take a bowl and pour rice vinegar into the bottom and drizzle some agave into it. Stir it together and add thinly sliced cucumber and chopped shrimp to the bowl. Finish it off by drizzling the miso dressing on top of the cucumber and shrimp, and enjoy your tasty meal!
