Seared Shrimp Salad with Pomegranate Dressing

This mouthwatering meal is filling, healthy, and extremely easy to make. Its arrangement of ingredients evokes a pleasurable flavor making you crave more with every bite. For the salad you’re going to need…

  • Arugula
  • Baby Spinach
  • Thinly sliced onions
  • Sliced cucumber
  • Thinly sliced or chopped apple
  • Toasted pecans (either slivered or chopped)
  • Pan-seared Shrimp (Buy 1/3 – 1/2  pound of shrimp per person)

For the shrimp: toss cleaned, deveined shrimp in 1 clove pressed garlic, a little olive oil, some fresh lemon juice, salt and pepper.

For the Pomegranate Vinegarette you’ll need:

  • ¼ cup red wine vinegar
  • ¼ cup pomegranate juice
  • 1/8 – ¼  cup olive oil
  • 2-3 Tablespoons agave
  • 1-2 teaspoons Stone Ground Mustard (Country Dijon)
  • 1 teaspoon sea salt
  • freshly ground pepper to taste
This recipe will make enough dressing for multiple salads and can be saved in a container in the refrigerator.
To finish off the meal I bought a multi-grain baguette which I made into toasted garlic croutons. Slice up the bread, drizzle olive oil, garlic powder, salt, and fresh pepper  on top and let bake in the oven on 350 degrees for 15 minutes.
Put all your ingredients together on a plate and enjoy!
