Most students can’t get enough of Chipotle, the popular Mexican restaurant on Marshall Street. One thing that sets those delicious burrito bowls apart is the rice, specifically the cilantro-lime rice. Follow the easy recipe below to create the goodness of Chipotle in your kitchen!
1 cup Basmati or any other long grained rice, rinsed lightly in cold water
1 tsp butter
1-2 small limes
1/2 tsp sugar (optional)
about 3 tbsp cilantro
salt to taste
Soak rice in water for 10 minutes. In a skillet on low heat, add the butter to the rice. Let the rice get coated with the oil. As the rice begins to get aromatic, add the juice of one lime and stir for one minute. Add 2 cups of water and salt. Cover the rice and cook for about 10-15 minutes. Stir the rice lightly and add chopped cilantro. Add more lime juice if required. Remove the rice from the flame, fluff it and let it sit for a few minutes with the lid on.
